Jillie's Treacle Gingerbread Cake
¾ cup plain flour
¼ cup self raising flour
½ teaspoon bicarbonate of soda
1 teaspoon ground ginger
¼ teaspoon cinnamon
¼ teaspoon spice
½ cup castor sugar
1 egg lightly beaten
½ cup milk
60 grams butter
½ cup treacle
Icing sugar to dust (if you choose not to ice)
1 cup icing sugar
2 teaspoons lemon juice
Sift flours, soda and spices.
Stir in sugar and combined egg and milk.
Combine butter and treacle in a saucepan and stir over heat until butter is melted.
Stir hot mixture into flour mixture.
Pour into prepared loaf tin.
Bake in a moderate oven for about 40 mins.
Stand 5 mins before turning out.
When cool, dust with icing sugar or spread lemon icing.
Serve on a platter with flowers.
